Ingredients
270g coarse bulgur Wheat
650ml warm Water
250g red Onions (finely sliced lengthways)
110g Tomatoes (chopped)
20 Curry leaves
2 tablespoons Olive oil
1 teaspoon Mustard seeds
2 green Chillies (quartered)
1 teaspoon minced Ginger & Garlic paste mix
½ teaspoon whole Chana dhal
½ teaspoon whole Urad dhal
1 tablespoon Water (for curry)
Salt (to taste)
Instructions

To prepare your bulgur wheat
1. Place the bulgur wheat in a medium sized pan.
2. Add water, replace the lid and bring to a boil.
3. Upon boiling, immediately reduce the lid to the lowest setting, and allow to cook for further 15 minutes until the bulgur grains have absorbed the remaining water. Keep the pan covered.
4. If the pan starts to run dry before 15 minutes are up, sprinkle a little more water over the bulgur wheat so it doesn't scorch.
5. Remove the pan from the heat, and allow it to rest another 15 minutes. Your bulgur wheat is ready to eat.

To make your spice mix
6. Heat your wok on medium heat. Pour oil into the wok.
7. Sprinkle mustard seeds into the oil, and let cook until they start to pop and release their aroma.
8. Now stir in chana dhal, urad dhal, curry leaves, green chillies, ginger and garlic paste and onions to the wok.
9. Let the mixture splutter for a minute, before adding a tablespoon of water and cooking for 5 minutes.
10. Then give the wok contents a good stir, before incorporating your chopped tomato and cooking for a further 10 minutes.
11. Add salt to taste.

The finishing touch
12. Mix in the cooked bulgur wheat to the spice mix, and cook for a further 3 minutes.

Notes
Serve with lemon wedges to add a citrussy note to the flavour of this dish.
Garnish with curry leaves.
